I got this recipe from my wonderful aunt.

Ingredients

Cooking

  1. Cook sausage in a large pot over medium high heat.
  2. Add onion and celery, cook until softened.
  3. Add garlic, cook until fragrant (30-60 sec).
  4. Add lentils, carrot, water, broth, and tomatoes
  5. Bring to a boil, then reduce heat to a simmer and cook for about 1 hour, or until lentils are soft.
  6. Finally, add spinach, allow to soften, then serve. Freeze leftovers.
