Notes
I got this recipe from my wonderful aunt.
Ingredients
- 1lb italian sausage
- 1 bag lentils (rinsed)
- 1 bag spinach
- 56oz tomatoes (2 large cans), diced
- 1 onion
- 2 stalks celery, minced
- 1 carrot, shredded
- 1 tablespoon garlic, minced
- 2 cups stock (chicken or vegetable)
- 8 cups water
- 5-8 sprigs of cilantro
- season to taste w/ garlic powder, parsley, thyme, basil, crushed red pepper, salt, and black pepper
Cooking
- Cook sausage in a large pot over medium high heat.
- Add onion and celery, cook until softened.
- Add garlic, cook until fragrant (30-60 sec).
- Add lentils, carrot, water, broth, and tomatoes
- Bring to a boil, then reduce heat to a simmer and cook for about 1 hour, or until lentils are soft.
- Finally, add spinach, allow to soften, then serve. Freeze leftovers.
